Amazing Cookie Dough Bites! NO LIE!!

I am not kidding on this one, guys! Thanks to the wonderful Pinterest (and another blogger), I am now in possession of the best grain-free, egg-free, white sugar-free, gluten-free peanut butter cookie dough bites IN THE WORLD. You're never going to believe what's in them either!!! Chickpeas. That's right, I said chickpeas - fondly known as Garbanzo Beans to some. I'm eating one right now and I can't believe it! This definitely has no remnant of a chickpea in sight. This is glorious. Glorious, I tell you! The choir in Heaven is singing the Hallelujah Chorus for me right now!

Back to Earth.

There is also no processed sugar in these wonderful balls of goodness. Honey is used as a sweetener. You can also create your own baking powder (posted within the recipe below), making this the greatest, natural cookie dough bite that you will ever sink your teeth into. MmmMmmMmm! I even fooled my dad with these - he thinks they're great! 

I can't say anything else about these that won't seem redundant, so here's the recipe. Go make some for yourself!!! I'm going to go and get another cookie. :)

 Grain-Free Peanut Butter Chocolate Chip Cookie Dough Bites

  • 1 1/4 cups canned, organic chickpeas, well-rinsed and patted dry with a paper towel
  • 2 teaspoons organic vanilla extract
  • 1/2 cup + 2 tablespoons natural peanut butter 
  • 1/4 cup raw honey
  • 1 teaspoon baking powder**
  • a pinch of salt if your peanut butter doesn't have salt in it
  • 1/2 cup organic, 60% (or more) dark chocolate chips
If you need grain-free baking powder, you can use 1 part cream of tartar + 1 part baking soda + 2 parts arrowroot.
   Preheat your oven to 350°F / 175°C. Combine all the ingredients, except for the chocolate chips, in a food processor and process until very smooth. Make sure to scrape the sides and the top to get the little chunks of chickpeas and process again until they're combined. Put in the chocolate chips and stir it if you can, or pulse it once or twice. The mixture will be very thick and sticky. With wet hands, form into 1 1/2" balls. Place onto a Silpat or a piece of parchment paper. If you want them to look more like normal cookies, press down slightly on the balls. They don't do much rising. Bake for about 10 minutes. Yields about fourteen 1 1/2" cookie dough balls.
