Thanksgiving Leftovers: Take One

So now that the feasting has ended, the next thing on everyone's mind is, "what am I going to with all of this turkey, dressing, cranberry sauce, and sweet potato casserole??"

Now being my lovely (aka annoying) Thanksgiving traditionalist self, I have no problem reheating Thanksgiving dinner exactly the same way we ate it last night. For multiple days. Until it's all gone. It doesn't bother me one bit. Apparently, it bothers other people (particularly members of my family after just a couple of days of "normal" leftovers), so I have a solution for at least 1 (possibly 2-3) of your "problems."

TURKEY HASH. 

It involves turkey, fried/roasted potatoes (if you had them. We didn't, but I just sauteed them in a skillet with some onion) a fried egg, and some of that yummy spiced cranberry sauce that you made yesterday. 

I decided to add the cranberry sauce after I had already taken the above picture and devoured half of my bowl, but I know that you can picture the cranberry sauce on top! It made that dish!!!  

So, since tomorrow's Saturday....you should make a big batch for breakfast and start clearing out your fridge! :)

Turkey Hash

 Olive Oil
1 Yellow Onion, finely chopped
4 Yukon Gold Potatoes, cut into chunks
2 cups leftover Turkey, chopped
Oregano, Salt, Black Pepper to taste
Eggs
Spiced Cranberry Sauce

      Heat oil in a sautee pan; add onion and potatoes. Cook until brown and the potatoes are almost cooked through. Add turkey and seasonings; stir to combine. Cover with a lid and continue cooking until the potatoes are done and the turkey is hot. 
      While  the hash is finishing, fry your eggs however you like them. 
       To plate:  Top turkey hash with your fried egg(s) and drizzle with your cranberry sauce.
