Chocolate Mint M&M Cookies

These didn't make it into Mr. C's cookie tin this year. I don't really want to say why....but they were SO good!!
I mean, let's be serious for just a second here. I find a recipe...that tells me to mix chocolate AND mint M&M's together...and you expect me to practice self control???
disclaimer: There are 6 people living in my house. Don't forget that part. ;)

These cookies are best when warm. Straight from the oven, warm. But they're not too shabby the next day either! 

I don't know what else to say other than, if you like chocolate and peppermint - you are going to LOVE. THESE. COOKIES.

Chocolate Mint M&M Cookies (idea from confessionofacookbookqueen.com) 
1-1/2 sticks butter, softened
1-1/2 cups sugar
2 eggs
2 teaspoons vanilla
2 cups flour
3/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semi-sweet chocolate chips
1 1/2 cups Mint M&Ms

Preheat oven to 350. Lightly grease cookie sheets.
In a large bowl, sift the flour, cocoa, baking soda and salt together.

In the bowl of a mixer, cream butter and sugar on medium speed until fluffy, about a minute.
Add eggs one at a time, beating after each addition.  Mix in vanilla.

Slowly add the flour mixture to the butter mixture and beat until fully combined.
Add the chips and M&Ms; slowly mix just until combined. 


Drop by the spoonful on an ungreased cookie sheet and bake for 7-9 minutes or until edges are set.
Remove from oven and let cool for several minutes before placing cookies on cooling rack.
                                                                                         Makes approx. 4 dozen
