Kids' Cooking Classes at the Pine Belt Holiday Expo + a Christmas Recipe

Yesterday was the first Pine Belt Holiday Expo. I had the privilege of working with the wonderful Jennifer Clark again and teach 2 kick-tail, completely fun kids' cooking classes! 
I was so crazy busy this time running between cooking classes and two booths, but between all of the awesome vendors and the entertainment/activities that had been planned, everyone that came to the event looked like they were having a ball! 
 The Kitchen Table sponsored my cooking classes, and they also had a booth and did some gadget demos to give people some Christmas gift ideas. Thanks KT!!! 
We had a blast making edible Christmas Trees, Snowman Faces, Christmas Tree Pizzas, and Personal Gingerbread Houses!
These kids came full of energy....
And with plenty of talent!!
I don't think I'll ever get tired of seeing that look on a child's face when they've made something all their own.
That sense of "I did this by myself and I rocked it!" :)
So, like last time, I'm going to post one of the recipes that the kids really enjoyed making: Grinch Cookies! Or actually "How The Grinch Crinkled Christmas Cookies." 
The 8 & Up class had a ball (literally!) mixing these up, and I got completely covered in GREEN! Therefore, let it be a lesson: make sure that your dye cap is securely screwed onto your bottle. ;)

I hope that you enjoy making these with your kids, then sit back with some hot cocoa and enjoy them, your family, and the movie "How The Grinch Stole Christmas."

"How The Grinch Crinkled Christmas" Cookies
1 (18.25oz) box French vanilla cake mix
6 T. Butter
2 Eggs
Green food coloring (I used 60 drops)
1 C. Powdered Sugar
1 tsp. Cornstarch

Preheat the oven to 375°.
Melt the butter and set aside to cool. In a shallow dish, mix together the powdered sugar and cornstarch with a fork.  In a large bowl, mix together the cooled butter, cake mix and eggs. This will be a little hard to stir together. Add the green food coloring and make sure it is all mixed in.
Take two spoons and drop a blob of dough in the powdered sugar. Move it around with spoon until it is mostly covered in powdered sugar. Then, once it is already covered, roll it into a ball and place it on a cookie sheet. Make sure you don't over crowd the baking sheet because these cookies spread out. Bake 9-12 minutes. They will look slightly puffed up. Take them out of the oven and cool for one minute. Then move onto a cooling rack. They will drop a little, but will still be nice and chewy.                   Makes about 36
