Homemade Lemonade Part 2: Watermelon edition

Do you remember from my post on Fish Tacos that I said I had 3 watermelons on my hands?? Well, one of them kind of sat in the ice chest one too many days and it got sort of...mushy...in the center. You know? The nasty texture that watermelon can sometimes have that makes you not want to eat watermelon again for a long, long time? Okay..it wasn't quite that bad, but it was getting there! However instead of wasting it, I decided that I wanted to make up a recipe for watermelon lemonade. *insert "evil" laugh here* ;) 

This is what I came up with! All I did was alter my regular lemonade recipe a bit and voila! Watermelon lemonade was birthed! 

So if you find yourself with a lot of watermelon, mushy or not, give this recipe a try. You won't be sorry!

Watermelon Lemonade
 
2/3 cup sugar
1 cup water 

6 large lemons (1 cup of juice)
3 cups cold water 

4-5 cups Watermelon, cut into chunks

Add the water to the sugar in the measuring cup; stir to dissolve. Set aside. 


Place chunks of watermelon into a blender and blend until completely processed. Transfer watermelon to a sieve with a bowl under it and strain all of the juice through it. (There will be some pulp-ish stuff left in the sieve.) Set aside. 

Roll the lemons on the counter with your palm a few times to make them juicier. Cut the lemons in half. Set the juicer over the bowl and squeeze as much of the juice out of the lemons as you can. If you have the kind of juicer with its own catch basin, be sure to remove any seeds. Pour the juice into the pitcher.

Stir the sugar water into the lemon juice, add the strained watermelon juice, then add the cold water and stir.
